bff blueberry muffins


The name of these perfect muffins comes from the fact that anyone that you share them with will instantly become your new BFF. The original recipe is from Martha Stewart's May 2008 everyday food magazine. I've scoured the internet and her site to find a link for this recipe, but no luck. Any who, here it is with my own alterations.

bff blueberry muffins

3/4 cup unsalted butter, melted
2 cups all-purpose flour
2 large eggs (room temp)
1/2 cup 2% milk
1/2 tsp vanilla extract
3/4 cup white sugar
2 tsp baking powder
1/2 tsp salt
1 1/2 cup (or more) fresh blueberries
Baker's Joy- baking spray (like Pam with flour too)

what to do
Preheat over to 375. Spray muffin tin with Baker's Joy.

In a bowl, whisk cooled butter, eggs, milk, and vanilla.

In a larger bowl, sift flour, sugar, salt, and baking powder.


Pour eggy mixer into the flour.

Mix gently with a rubber spatula.

Fold in blueberries.

Spoon batter into muffin tins. I've used large, mini, and shaped muffin tins- all are fine.



Bake large muffins for 15 to 20 minutes. Small or mini muffins for about 10 to 12.
Pull a butter knife around the edges of muffins if they are a little obstinate popping out of the tin.
A large bat of butter & acup of coffee are the perfect bffs for these babies. De-lish!

  3. I love blueberry muffins, but then again I honestly love all muffins! Pancakes are always a go to for me for breakfast on the weekends. :)

  6. those look very pretty... I just have a hard time w 'real' blueberries. i am used to the fake ones... Maybe if I mush them I can do it..
